What you need

  • ½ cup (125mls) sweet chilli sauce
  • 1 tablespoon soy sauce
  • ¼ cup (60mls) Chinese cooking wine. If you don’t have any? Well, mum’s sherry is just as good!
  • 2 cloves garlic, crushed
  • 1 teaspoon fresh grated ginger
  • 2 tablespoons finely chopped coriander
  • 1.5kg beef spare ribs

What you need to do

Combine sauces, wine, garlic, ginger and coriander in a large shallow dish. Add the ribs and toss to coat in the marinade. Cover and refrigerate for 3 hours or better still overnight.

When your guests have arrived and you are ready to show off your skill on the new barbeque, drain the ribs and cook on a heated oiled flat plate, covered for about 30 minutes, or cooked as you want them

This yummy meal only takes 10 minutes to prepare plus the refrigerator time. It cooks in 30 minutes and will feed 4 people.

Serve with a fresh garden salad.

What to drink with it

Well, you could try Little Creatures Pale Ale. It is an intensely hoppy, hugely fragrant beer. It packs more flavour into a bottle than just about any brew on the block.

Just remember any spare rib recipe can get a little messy so make sure you serve it up with some napkins.  So your guest can clean their fingers as they go.
